- SCAMPI FLAMINGO (SHRIMP IN SHERRY CREAM SAUCE)

- 2 Cups butter
- 4 Onions, minced
- 4 Celery stalks, chopped
- 4 Carrots, chopped
- 1 tsp. Thyme
- 1 Cup Brandy
- 6 Cups Cream
- 2 Cups Mild
- 1 1/3 Cups Sherry
- 2 Cups Béchamel sauce
- 2 tsp. Salt
- 4 tsp. Lemon juice

- Melt Butter and add onion, celery, carrot and thyme. Cook 10 minutes.

- Add shrimp in the shells and cook 10 minutes. Stir frequently. Add brandy and ignite. Shell shrimp.

- SCAMPI Sauce

- Add to skillet the cream, milk, sherry and Béchamel sauce. Simmer 10 minutes. Add salt and lemon juice. Heat shrimp 5 minutes.
